Weekly Tapas Recipe
Olivos Aliñadas
(Marinated olives) - Recipe 1
1 kilo pitted olives
1/2 tsp dried thyme
1 piece of fennel
1/4 tsp dried rosemary
2 bay leaves
1 tsp peppercorns
5 cloves garlic
6 tbsp of distilled white vinegar
Sealable jars or containers.
Wash the olives under the tap.
Shove all the ingredients, except the olives, into a large bowl
and mix them up thoroughly. Now add the olives and give the
whole thing a good stir until all the olives are nicely coated.
Place the mixture into one large, or several small, sealable
jars or plastic containers. If there is any space left in the
container, fill it up with water. Give the jar a good shake then
put it in the fridge and forget about it for at least 3 or 4
days.
When you decide to serve them, bring them up to room temperature
first.
