Dia de la Morcilla (Day of the Blood Sausage) in Canillas de Aceituno coincides with the celebration of the Fiesta de la Virgen de la Cabeza, the patron saint of the town.

The festival begins at 10:00 with the municipal band marching through the streets and this is followed by a Mass in the church and a procession through the streets.

The Dia de la Morcilla celebration began in 1987 and around 350 kilos of sausage are consumed during the celebrations, all washed down with ample supplies of wine and beer. The morcilla sausage from Canillas de Aceituno differs from other examples by the inclusion of onion, which gives it a distinctive flavour.
