Longer shelf life for guacamole sauce

Frutas Montosa in Vélez-Málaga is set to invest €1 million (of European funds) in the acquisition of technology which will increase the shelf life of guacamole sauce in order to enable export to more European countries.

Guacamole sauce has a shelf life of between twelve and fourteen days, which means it is not possible to export it to many European countries. The new processing method will increase the shelf life to between twenty and sixty days, allowing greater exports.

The system achieves a reduction in microbial contamination without the use of additives and without affecting the colour, taste, smell, texture or nutritional value.
